Breakfast:
Yogurt and fruit
Smoothies
Pancakes with syrup and fruit
GF Chex
Eggs and toast
You'll notice the recipe for the smoothies is not actually gluten-free as currently written--just leave out the wheat germ. Also, I've been using the GF Bisquick Pancake and Baking Mix for my pancakes. The ingredients aren't as bad as I would have expected (although I'm sure there are healthier mixes out there) but they cook, look, feel, and taste like real pancakes. I like that. Again, the GF Chex probably aren't great nutritionally either but they taste good and sometimes I need to indulge! And I'm using this bread recipe to make the bread I use for toast.
Lunch/Snacks:
Peanut butter and jelly sandwiches
Hummus and sliced veggies
Grilled cheese sandwiches and soup
Fruit
GF crackers and cheese
Leftovers
PB & J will go on this bread as will the grilled cheese sandwiches. It's not my favorite sandwich bread (I prefer it toasted) but I couldn't bring myself to spend $8 a loaf on bread. Also, I cheated and bought canned soup this week (several varieties of Amy's that were GF).
Dinner:
Sunday-Grilled sausages and salad
Monday-Mac n' Cheese with salad
Tuesday-We're eating out! J has a work party...
Wednesday-Taco soup with corn chips and salad
Thursday-Roasted Tomato and Zucchini pasta with garlic bread
Friday-BBQ chicken pizza (I'm currently using this GF pizza crust recipe)
Saturday-Rib-eye steaks and mashed potatoes
Sunday-Chicken pot pie and salad
I've discovered that HEB has nitrate/preservative/MSG free sausages so I'm indulging my craving for sausage this week. The Mac n' Cheese recipe is not gluten-free as written but I'll use GF macaroni noodles and Bob's Red Mill All-Purpose GF Baking Mix in place of flour. For the garlic bread on Thursday I'll make myself some garlic toast on GF bread and buy ready made garlic bread from the bakery for everyone else. Friday I'll make two pizzas and freeze one...
Dessert:
GF Orange Almond Cake
GF Chocolate Chip Cookies
I don't make dessert every week but after last night I figure this week could use some dessert. I add pecans to the cookies.
This is way more meals than I normally plan for one week. I'll be freezing leftovers whenever possible (and appropriate--some of these meals don't freeze well) in an effort to make this shopping trip last as long as possible.

my eldest has a barley sensitivity, so i've really cut back on our gluten intake. it's kinda of amazing how pervasive wheat especially is!
